Waffle Mornings
One of the most common recipes that I use from our recipe index is our Oatmeal Pancake Mix recipe. Ever since I stumbled on this recipe a few years ago, I haven’t used any other pancake mix. My family loves it. I love it too. Not only does it have a hearty flavor and texture, but it is made with wheat flour and oats. It’s delicious, filling, and healthy. I always make a few batches and freeze them for an easy, healthy make-ahead breakfast.
Well, the other morning was a waffle morning. I don’t know what made it a waffle morning. It just was. My husband suggested that we use our favorite pancake mix to make the waffles. I initially scoffed at his idea thinking it wouldn’t work but immediately began to do a little research on how to transform a pancake mix into a waffle mix.
Turns out, it is super easy. In order for pancake mix to take form and not stick as they become waffles, they just need a little extra fat in the mix. All I did was add a little oil (I used coconut oil) to the recipe and the waffles turned out beautifully!
How to Turn Pancake Mix Into Waffle Mix
To use your pancake mix to make waffles, you’ll need to add a little extra oil to use it as a waffle recipe.
Here’s the formula: For every cup of dry pancake mix, just add 2 extra tablespoons of oil.
So for example, since we usually use two cups of dry mix for our oatmeal pancakes, I added 4 tablespoons of oil to the batch.
With bellies full of waffles, we were all set to take on the day ahead!
Since you are clearly in the waffle-making business at the moment, here are a few tips to make your waffles AWESOME.
Strike while the iron is HOT! If your waffles come out a little pale and soft, it could be because the waffle maker you’re using isn’t hot enough. It’s important to preheat the waffle maker for at least 5-10 minutes. Yes, seriously that long! Also, pause for a couple minutes between batches to let the iron heat up again.
Opt for oil instead of butter. For crispier waffles, use vegetable oil or coconut oil instead of melted butter in your recipe. Unlike butter, oil doesn’t have any water content, which adds moisture and hinders a crust from forming.
Can you freeze waffles?
Yep! In fact, freezing waffles is a great use of your time. They are easy to reheat for busy mornings.
How to Freeze Waffles:Make and cool waffles completely on a cooling rack. Place waffles in single layers in a gallon-size freezer bag with parchment paper between layers. Seal tightly and freeze.
To Prepare Waffles From Frozen:Toast frozen waffles. If still slightly cold inside, microwave in 10-second increments until warmed through.

Instructions
For each 1 cup of dry pancake mix, add 2 tablespoons of oil. Then, stir in the additional liquid/ingredients listed in the recipe or on the box until combined.
Add just enough waffle batter to cover the waffle iron and cook about 3 minutes or until done. (Check your waffle iron’s instructions .)

You must double the amount of fat you use for the pancake mix. For example, you use 1 tablespoon of butter per cup of dry pancake mixture. Instead, add 2 tablespoons of butter to ensure the crispiness of the waffle. However, we recommend using oil over butter.
Our answer. Nigella's recipe for Waffles (from AT MY TABLE has waffles that are golden on the outside and light and soft inside. Waffle batters contain a higher proportion of fat than pancake or crêpe batters, as the extra fat helps to keep the waffles soft. Nigella's recipe uses 125ml (1/2 cup) of vegetable oil.
1. Use Milk/ Alternative Milk Instead Of Water. Even though the mix may call for water, you can easily substitute that for an alternative milk (I like oat milk). You may have to add a dash more due to the difference in consistency, but it'll taste so much better!
You should test the time and temperature settings during baking, as well as the different weights of the dispensed mix. The baking time of a waffle also affects its susceptibility to splitting. Underbaked dough is soft in the center and prone to splitting.
Whisk the egg yolk into the wet ingredients, but hold off on the whipped egg white until after combining the wet and dry ingredients. Then, gently fold in the whipped egg whites. The whipped egg whites thicken your batter and make the middles of your waffles more fluffy and tender.
Even if your boxed mix doesn't call for an egg, go ahead and add one. Eggs provide a creamy richness for a pancake mix hack that will make the batch taste homemade, and they allow the pancakes to rise by keeping the bubbles structurally intact throughout the cooking process.
However, there are a few key differences between these tasty breakfast foods. For one, waffle batter has a little bit more sugar, butter, and eggs than pancake batter. This helps make the waffles richer because they'll have a higher fat content. Alternatively, the pancake mix is thinner and easy to pour.
Milk and butter: Milk and butter add moisture and richness to the pancakes. Egg: A whole egg lends even more moisture. Plus, it helps bind the pancake batter together.
The options include sifting your dry ingredients to aerate the mix, adding milk or a milk alternative, or beating egg whites to fold into your mixture. Each one of these will have you feeling like you're biting into a sweet pancake cloud.
Pancakes and waffles typically both contain baking soda, which causes them to rise. As soon as the baking soda is combined with the wet ingredients (which contain an acidic ingredient, like often buttermilk), it starts producing carbon dioxide gas bubbles that cause the batter to rise.
You're probably getting the pan or griddle too hot so they're cooking on the outside before the inside is done. Either cook them longer or reduce your heat. If you're using an electric waffle iron with consistent heat, you're not cooking them long enough.
Both traditional is mildly sweet and a little bready, although waffles are more so on both counts. Waffles generally have more butter and sugar in the batter and become more caramelized while cooking, so they savor a little richer. On the other hand, pancakes are softer and easier to eat.
While pancake mix and Bisquick share many ingredients, the two are not the same. The main difference is that the pancake mix is sweeter. Most pancake mixes can be used in place of Bisquick and vice versa in sweet recipes. Compare your pancake mix with Bisquick's ingredient list before swapping.
Grease a griddle pan (about 20cm square) with butter and put over a medium heat. When the butter starts to foam, pour in half the batter to cover the base of the pan.
Pancake batter, on the other hand, is usually thinner and more liquid compared to waffle batter. It has less fat and often includes a larger proportion of milk to create a smooth and pourable consistency. Pancakes typically rely more on baking powder for leavening, resulting in fluffier and lighter pancakes.
