Sugar Free Brownie Cookies

When you are in the mood for a dose of chocolate, along with a cookie, this is a good way to go.
Just the thought of eating a cookie that is also a brownie makes me happy. Having one that is sugar free makes me even happier.

What I like is that this recipe is actually rather simple to make.
What I mean is that there are not a lot of ingredients that you need to add to this. This is basically a brownie without the ingredients that normally make a dough rise. Well, kind of.

This is one of those cookies that is all about the chocolate.

I really could call this a 'double chocolate' cookie alternatively. That is because we are using two ingredients that both introduce the chocolate to the cookie.

You will need to use sugar free chocolate chips.
Sugar free chocolate chips can be hard to find at your local store. At least it can be where I live. However, you can always find sugar free chocolate chips online.

The Recipe for Sugar Free Brownie Cookies

Besides the glass of milk that you will need to dunk these into (are you a dunker?), you will need these ingredients:

  • Unsweetened Cocoa- ¾ cup.
  • Flour (AP)- 1 ¼ cups.
  • Salt- 1 teaspoon.
  • Baking soda- ¼ teaspoon
  • Sugar Free Chocolate Chips- 1 8-10 ounce bag separated. See post for details.
  • Butter- one and a half sticks .
  • Eggs- 2
  • Brown sugar alternative- 1 ¼ cup equivalent to regular brown sugar. You can find brown sugar alternative online here .
  • Vanilla Extract- 1 teaspoon.
  • Optional- chopped nuts

How to make a sugar free brownie cookie.

  • Preheat your oven to 350 and prep your pan for nonstick. I like to use parchment paper or silicon sheets.
  • In a medium bowl, combine together the flour, salt, baking soda, and unsweetened cocoa. Set this aside.
  • Now, in a microwave safe bowl or sauce pan, melt together the butter and one half of the chocolate chips.
  • While the chocolate and butter are melting, in a mixing bowl, stir together the eggs and the brown sugar alternative.
  • Pour the melted butter/chocolate mixture into the mixing bowl with the eggs and chocolate (allow to cool a bit if the chocolate and butter are hot as you do not want to cook the eggs). Stir gently. Then add the flour mixture to this bowl a bit at a time mixing between additions. Then add your remaining ingredients and blend this in. Alternatively, you can place your cookies onto the sheet and then press into the cookies the remaining chocolate chips and optional nuts.
  • Bake 8-10 minutes until almost done. Remove from oven and allow to cool a bit on the pan- no longer than 10 minutes. Remaining cooling should be done on a rack.
