Saute garlic and onions

While the onions and garlic are cooking. Prepare your green peppers (or multi-color peppers) by cutting off the tops and removing seeds and membranes. I like to use cooked rice and any rice will work, however, brown rice usually takes longer to cook.

Once your onions and garlic mixture is ready and your rice is cooked place all stuffing ingredients in a bowl. I used either lean ground beef or ground turkey.

Instant Pot Stuffed Peppers Cooking Method

I thought I would try out cooking half of the pepper in the oven and another half in the Instant Pot.

If you are cooking your peppers in your Instant Pot you will need to add 1/2 cup to the inner pot then place the peppers on the rack.

The peppers need to be par-cooked before filling so that they cook through. Many recipes call for boiling the peppers first, but I prefer to roast them – more flavor and less cleanup!

What are the best peppers for stuffing? ›

Here's what you'll need to make these easy stuffed peppers: Red bell peppers – Red bell peppers will always be my #1 pick. If you want to try a different color, use yellow or orange peppers, as they're sweeter than their green counterparts. Black beans – Use canned, or cook your own.

Do I have to cover stuffed peppers when baking? ›

Bake: Add just enough water to cover the bottom of the baking dish, and cover with aluminum foil. This steams the peppers as the filling heats, so that the peppers are crisp-tender, and not mushy. Uncover for the final 5 to 10 minutes of baking to brown the melted cheese topping.

Should you soften peppers before stuffing them? ›

I definitely suggest par-cooking the bell peppers first, just a little bit before stuffing them. Not only does this help to soften the bell peppers, but it also cuts down on your cook time. As the bell peppers are cooking you can make the filling, shaving off about 20 minutes from your total cook time.

How to make bell peppers taste better? ›

Bell peppers are naturally sweet and but can easily have a lovely savory side to them with the right seasoning (I like to use salt and thyme). Sautéing them with a little olive oil enhances their natural flavors and creates a delicious and colorful addition to a meal that requires little work!

Why are my stuffed peppers watery? ›

Bell peppers contain more than 90% water, much of which is released during the cooking process. Give them a jump start and prevent them from falling apart by roasting them for a short time in a hot oven.

If your supposedly “sweet” peppers taste bitter, the most likely culprit is lack of water. Pepper plants need to be consistently moist. Drought-stressed peppers go into survival mode, hastily ripening fruits and seeds without putting much energy into flavor. The resulting peppers are thin-walled and bitter.
