I first had strawberry tanghulu during my trip to South Korea around 4 years ago. I saw someone selling these candied strawberries on a skewer at a street market and I had to buy one. They were so delicious, crunchy from the sugar coating and perfect tartness from the fresh strawberries.

The key is to get the sugar coating cooked just right, so that when you bite into it- the sugar shatters and gives you that delicious crunch. If the sugar is not cooked long enough, it will be too pliable and not the safest for your teeth to bite into.

What you’ll need to make strawberry tanghulu:

  • Fresh strawberries
  • White granulated sugar (I prefer dixie crystals pure cane sugar)

How to make strawberry tanghulu:

Wash and cut the stems off the strawberries. Completely dry your strawberries and skewer them onto a wooden skewer. Set the skewered strawberries aside. It is important that the strawberries are dry to allow the sugar coating to adhere well.

Line a baking sheet with parchment paper and set it aside.

In a small heavy-bottomed pot, combine the sugar and water and cook on medium-high heat. Allow the sugar to completely dissolve and melt, the sugar should start to form small bubbles. Use a candy thermometer to cook the sugar for about 6-8 minutes to 300ºF-310ºF (hard-crack stage) or until the sugar syrup looks slightly golden. If you don’t own a candy thermometer, you can check if the sugar is ready by drizzling some of the sugar syrup over a bowl of ice-cold water. If the sugar hardens right away and “snaps“, then it should be ready.

Once the sugar syrup is ready, carefully tilt your pot to one side to allow the sugar to pool to one side. Take your strawberry skewers and dip them into the sugar syrup, gently turn the strawberries to evenly coat all sides. Set the sugar-coated strawberries on the parchment-lined baking sheet for the sugar to set. Repeat this step for the remaining strawberries.

These are best enjoyed right away! If you let it sit for too long, the moisture of the strawberries will eventually soften the sugar coating.
